I will change this page name soon. I will be recording my shopping trips and meal planning. I will create dinner plans, lunch plans, breakfast plans, and snack plans per each shopping trip. I will update this just twice a month! I am pretty proud of this months shopping trip!! I planned 2 wks and due to sales and coupons I bought 3wks worth of food for $250!!!!! Will give you the know how soon!

So obviously its been a couple days since I've updates my recipes. I've had an appifiny(sp)!! I grocery shop for 2wks at a time, and that means I meal plan for 2wks at a time! SOOOO, I'm going to update recipes every 2wks! I will try to make a meal Planning page attached to this one and make my grocery list, and dinner menus on it! hope you will enjoy this idea!

Happy Valentine's Day!!! There is a special dinner tonight....
Chicken N Dumplins

3-4 med frozen chicken breasts
3-4 carrots peeled and sliced
2 celery stalks sliced
2 cans chicken broth
1 can cream of chicken/mushroom
combine all ingrediants in crock pot on high 6-8hrs....30 minutes before serving cute pillsbury biscuits (the 4pack, only use 1-2packages) into 1/6ths and put in crock. Recover let sit for 30 minutes then eat!

Chocolate Covered Strawberry Cupcakes

One box of Strawberry cake mix...follow instructions for cupcakes
Homemade Chocolate Icing:
8oz cream cheese room temperature
1/4c butter room temperature
4c powdered sugar
1/2c cocoa powder
Cream together cream cheese and butter, then slowly add sugar until all is mixed then add cocoa poweder til mixed! Pipes very nicely!!!




Cherry Cream Cheese Apple dip
8oz cream cheese softened
1/2 package of sugar free Cherry jello
(can change flavor by changing jello)
1/4c milk (may want to add a bit more)
mix ingrediants together for a nice apple dip! or graham cracker dip! YUMMMM

We love to try new things!!! So we pulled a recipe out of Parents Magazine!! Of course we revamped it and It was amazing and quick!!!
Chili Con Carne
hamburger meat (1lb)
onion (diced)
minced garlic (6 cloves/1 Tbs)
chili powder 1Tbs
1tsp ground cumin
red pepper (diced)
green pepper (diced)
med can crushed tomatoes
2 small cans chili beans

sautee onion and peppers, brown meat then drain. Add them together with the spices, tomatoes, and chili beans. We are from good Ole Indiana, so we like noodles in our Chili....we made macaroni noodles and added them to the chili when they were done! Serve w/ shredded cheese and crackers! YUMMM

Here is a little story before I give you tonights recipe!!! One of my all time favorite dinners is meatloaf! My mom use to make a good meatloaf, then as I got older my dad's new girlfriend made a REALLY good meatloaf. After that I combined bits from both, added my own flair, and made a fantastic meatloaf!!! For the first six months of our marraige I made meatloaf about every 2wks!! It was easy and affordable!! One night, Eddie asked what was for dinner and I replied meatloaf....as we sat down for dinner, he said "babe, I feel like we eat meatloaf alot!" I told him, " well, ya we eat it about every 2 weeks, is that too much? I can space it out more." He then said, "have I not told you I really don't like meatloaf? I mean not enough to eat it every week." LOL, first of all who doesn't like meatloaf? Secondly, why did he wait so long to mention this???

This next story leads into tonights dinner!!! I am very close with my Aunt Skip. She and my uncle had us over for dinner one day after church and they were having meatloaf patties! Hilarious right??? Well I had told my aunt not to tell Eddie, just to tell him they were hamburger patties. And that is exactly what we did! He thought it was weird we weren't eating them on a bun, but ate anyway. He commented that they were really good! I was laughing and said "really?" When he found out they were meatloaf patties, he said it must be because they were pattied he liked them. So now they are a part of our menu!!!

Meatloaf Patties, Pots, and corn on cob
hamburger meat (1lb)
green and red peppers (diced and sauteed)
onion (diced and sauteed)
shaved carrots
packet of Lipton Onion Soup mix
1 egg
1/4c milk
crushed crackers
ketchup
salt
pepper
garlic or garlic salt
onion salt

combine these ingrediants and form patties, I just use a cookie scoop and flatten them. Cook on griddle about 250 degrees or on a flat pan over medium/low heat!

cut potatoes and cook in a pan with LOTS of butter and a little bit of water. Add Tastefully Simple Spinach & Herb mix.

The past few day's I haven't posted our meals...so updating!!!
Jazzy Pigs N Blankets
crescent rolls
hot dogs
garlic salt
onion salt
parm cheese
assorted fresh veggies
oil
pork n beans (can)
brown sugar
ketchup

Spread the crescent rolls and sprinkle with garlic salt, onion salt, and parm cheese then roll the hot dog in it...bake for the time on crescent roll package.

Chop/crinkle cut/Dice veggies and coat with Extra virgin olive oil, garlic salt, onion salt, and season salt (my favorite is Tastefully Simple Season Salt)....bake @ 400 for abour 30-45 minutes.

Poor Pork n Beans in pot add ketchup and brown sugar to taste to make baked beans!

The night before we just had tostino's pizza's per Reba's request.

Chicken Quesadillas
Eddie and I tackled these semi sucessfully! We have never made quesadillas, but we had a good dinner. We love food and we love to try new things and to learn!!!

leftover chicken taco meat (the crock pot stuff)
shredded cheese
green and red peppers
onion
spinach (optional)
tortilla shells

from there we just put the shells on a pan added all the ingredents and baked them on 400 degrees for about 10 minutes (open faced) we put another tortilla shell straight on the rack. Once cooked we topped the open faced shell with the other shell.

Next time we will sautee the veggies first. Also we will bake the quesadillas straight on the rack rather than a pan!!

Tonight is a tried and true recipe....something from my childhood! I hated it growing up, but Mom made it all the time. This was one of dad's favorites and you could use a cheap cut of meat! Now, I will eat it, but still not a favorite. However, my kids and Hubs LOVE it.

Mushroom Steak

Combine the following ingredients in a crock pot on low for 4-6hrs or high for 6-8hrs:
2 cans of cream of mushroom soup
1can of water
stew meat or chunked round steak (stew meat is more convenient)
a package of lipton onion soup
Just before serving make noodles or rice. While those are cooking add 2 heaping Tbs sour cream to crock pot mix. Serve over rice or noodles

I got to thinking...maybe you'd like to know the cost of this...chunk of round steak $5.69, Lg can of cream of mushroom 1.69, box of 2 lipton onion soup 1.98, bag of egg noodles .69!!! Can of green beans and fresh broccoli as side....Definitely under $10 for the whole meal!!! Serves 4 plus lunch for 2 the next day!!!



tonight I tried a CROCK POT recipe I found on pinterest....3-ingredient chicken tacos! And Energy-Bites!
Crock Pot Chicken Taco's

4 med-lg frozen chicken breasts
16oz can of salsa (although next time I will be using a larger can of salsa maybe 20oz)
1 packet of taco seasoning
(next time I will also add chile's or peppers)

crock on high 4-6hrs or low 6-8hrs....serve on soft shell w/ lettuce, cheese, salsa, and sour cream if you like.... fruit as a side...it must be a balanced meal after all!!!!

The family loved it! AND I had enough to freeze for later and some for Quesadilla's latter on in the week!!! :) Yes I plan my menu's!!! I'll add that on this page too!!


No Bake Energy Bites
This recipe was fudged a bit! :) I do love them and so did the Hubs!!!
1cup Oats
1cup Peanut Butter
2/3 cup Honey
1 cup Mini choc chips
2 tsp vanilla extract
1 cup Coconut flakes (I substituted 1/2 cup walnuts, bc I don't like coconut flakes)
.......called for flaxseed but I didn't have any so I left it out

Mix in a bowl, refrigerate for 1hr, then roll into bite sized balls!!! Made about one and half dozen??? Great healthy snack for anytime!!!
